Cookie-licious Mini Cheesecakes
- 1-1/2 cups crushed European-style cookie for coffee (speculoos cookies) (about 20 cookies)
- 1 cup sugar, divided
- 1/4 cup butter or margarine, melted
- 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 tsp. vanilla
- 4 eggs
- 1/3 cup European-style cookie butter (speculoos cookie butter)
- Heat oven to 325F.
- Mix crumbs, 3 Tbsp.
- sugar and butter; press onto bottoms of 24 paper-lined muffin cups.
- Beat cream cheese, remaining sugar and vanilla with mixer until blended.
- Add eggs, 1 at a time, mixing after each just until blended.
- Spoon over crusts.
- Sprinkle with remaining crumb mixture.
- Bake 25 to 30 min.
- or until centers are almost set.
- Cool completely.
- Refrigerate 2 hours.
- Microwave cookie butter in microwaveable bowl 30 sec.
- ; stir until melted.
- Cool slightly.
- Drizzle over cheesecakes.
