Blackberry Vanilla Muffins

  1. Heat oven to 400 degrees Fahrenheit.
  2. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  3. In another bowl, beat together the egg, milk, melted butter, and vanilla.
  4. Pour the egg mixture into the flour mixture.
  5. Stir quickly and just enough to moisten the dry ingredients.
  6. Do not overmix - the batter will be lumpy.
  7. Stir in the frozen blackberries.
  8. Fill greased muffin tins.
  9. Bake for 22 minutes or until golden brown.
