Carrot Casserole

  1. preheat oven to 400
  2. melt butter in 8x8 baking dish.
  3. mash carrots as smooth as possible
  4. add well beaten eggs
  5. use melted butter to grease the sides if the dish.
  6. Pour remaining butter into carrots
  7. add vanilla
  8. in a separate bowl combine dry ingredients
  9. add dry ingredients to carrots mix throughly
  10. pour mixture into pan and place in a 400 oven for 12 minutes
  11. Reduce temperature to 350 and continue to cook for 40-45 minutes.
  12. Casserole should be firm some cracking across the top.
