Carrot Casserole
- 1 stick butter (1/2 cup)
- 2 cup carrots (about 1.5 cans)
- 3 each eggs
- 1 tsp vanilla
- 6 tbsp flour
- 2 tsp baking powder
- 1/4 tsp cinnimon
- 1 1/4 cup sugar
- preheat oven to 400
- melt butter in 8x8 baking dish.
- mash carrots as smooth as possible
- add well beaten eggs
- use melted butter to grease the sides if the dish.
- Pour remaining butter into carrots
- add vanilla
- in a separate bowl combine dry ingredients
- add dry ingredients to carrots mix throughly
- pour mixture into pan and place in a 400 oven for 12 minutes
- Reduce temperature to 350 and continue to cook for 40-45 minutes.
- Casserole should be firm some cracking across the top.
