Refreshing Double-Melon Delight

  1. Stir boiling water into dry gelatin mix in large bowl at least 2 min.
  2. until completely dissolved.
  3. Add enough ice to cold water to measure 1-1/2 cups.
  4. Add to gelatin; stir.
  5. Remove any undissolved ice.
  6. Refrigerate 30 min.
  7. or until slightly thickened (consistency of unbeaten egg whites.)
  8. Stir in melon balls and mint leaves.
  9. Spoon into 9x5-inch loaf pan.
  10. Refrigerate 4 hours or until firm.
  11. Unmold.
  12. Store leftover gelatin in refrigerator.
