Turkey Leftover Soup

  1. I boil my turkey bones for stock and use that rather than chicken broth.
  2. Combine broth, rice, and onions.
  3. Bring to a boil.
  4. Reduce heat and simmer 40 minutes.
  5. In a medium sauce pan, melt butter.
  6. Stir in the flour, salt and pepper.
  7. Cook 1 minute stirring until smooth and bubbly.
  8. Slowly stir in the milk and cook until slightly thickened.
  9. Slowly add the milk mixture into the rice mixture, stirring slowly until well blended.
  10. Add remaining ingredients and heat gently.
  11. Do not boil.
  12. Garnish with crisp bacon bits.
