Cherry Pomegranate Sugar Cookies

  1. In a large bowl mix butter and sugar.
  2. Beat in egg and cherry extract until light and fluffy.
  3. Mix in flour and baking soda.
  4. Half way through the flour being incorporated; add the craisins.
  5. Divide dough in half.
  6. Shape each half into a log about one and a half inches in diameter.
  7. Wrap each half in wax paper and refrigerate for about 1 hour until chilled through.
  8. Preheat oven to 375F.
  9. Unwrap rolls and cut into one-fourth inch slices.
  10. Place on parchment paper lined baking sheet and bake for 10 to 12 minutes or until lightly browned around the edges.
  11. Cool on wire rack.
