Andy's Rice Parmesan
- 1 tablespoon olive oil
- 12 cup onion, chopped
- 1 garlic clove, minced
- 1 cup chicken broth
- 1 cup uncooked rice
- 12 cup dry white wine
- 12 cup grated parmesan cheese
- In a skillet over medium heat, heat oil.
- Add onion and garlic, saute for 8 minutes.
- Stir in chicken broth, rice and wine, and bring to boil.
- reduce heat to low, cover, and continue cooking for 20-25 minutes or until liquid is absorbed.
- Transfer to serving bowl, and add cheese before serving.
