Cheese Ball

  1. Let cheeses soften to room temperature.
  2. In a medium bowl, mix the cheeses together with a fork until well blended.
  3. In a small bowl, combine the minced onion, parsley, and 1/2 cup pecans; add to the cheese mixture, blending well.
  4. Cover and chill until firm.
  5. Shape into a ball and roll in remaining nuts.
  6. Sprinkle with paprika and additional parsley, if desired .
  7. Chill.
  8. Place in the center of a large platter or tray.
  9. Serve with crackers.
