Bulghur MeatBalls With Fresh Vegetable Sauc Recipe

  1. Preheat oven to 350 degrees.
  2. Combine the bulghur wheat, tofu, bread crumbs, salt, soy sauce, green onions, coriander, and thyme.
  3. Shape mix into 1 1/2-inch balls.
  4. Bake on a cookie sheet sprayed with vegetable spray for 10 min on each side.
  5. In a large skillet over medium-high heat, combine vegetable stock and 1 1/3 c apple juice; bring to a boil.
  6. Reduce heat to low; add in carrots and cook 3 min.
  7. Add in green pepper strips; cook 4 to 6 min longer, or possibly till vegetables are tender-crisp.
  8. In small bowl.
  9. combine cornstarch and 3 Tbsp.
  10. apple juice; blend well.
  11. Add in to vegetable mix; cook 2 to 3 min, or possibly till thickened, stirring often.
  12. Add in grnd pepper; mix well.
  13. To serve, spoon warm cooked rice onto large platter; place bulghur
  14. "meat"balls on rice and pour warm vegetable mix over "meat"balls.
