Chicken Fajita Taquito Rolls

  1. Preheat oven to 425 F.
  2. Heat olive oil in a skillet over medium high heat then add peppers and onion and cook until onion is clear.
  3. Remove skillet from heat.
  4. Cover a large baking sheet with aluminum foil and spray the foil lightly with cooking spray.
  5. In a large bowl mix together chicken, fajita seasoning, peppers and onion mixture and cheese.
  6. Mix well.
  7. Lay your tortillas out on a work surface.
  8. Spoon 2-3 tablespoons of the chicken mixture into a flour tortilla and roll it up.
  9. Place the Taquito Roll Roll seam-side down on the baking sheet.
  10. Repeat the filling and rolling process until you are out of tortillas.
  11. Once finished, spray the tops of the taquitos with non-stick cooking spray or brush with olive oil.
  12. Place pan in oven and bake for 15-20 minutes, or until edges and tops are golden.
  13. Then remove the pan from the oven and let the taquitos cool for a couple of minutes.
  14. Serve with your favorite toppings.
