Chicken Fajita Taquito Rolls
- 1 teaspoon Olive Oil
- 2 whole Bell Peppers, Seeded And Sliced
- 1 whole Onion, Sliced Thin
- 4 cups Cooked, Shredded Chicken, A Rotisserie Chicken Works Well Also
- 2 Tablespoons Fajita Seasoning
- 1 cup Shredded Mexican Blend Cheese
- 20 whole (6-inch) Flour Tortillas, You May Use Less Or More Depending On How Much You Fill Them
- Non-stick Cooking Spray
- Optional For Serving: Sour Cream, Pico De Gallo, Chopped Cilantro, Your Favorite Dipping Sauce
- Preheat oven to 425 F.
- Heat olive oil in a skillet over medium high heat then add peppers and onion and cook until onion is clear.
- Remove skillet from heat.
- Cover a large baking sheet with aluminum foil and spray the foil lightly with cooking spray.
- In a large bowl mix together chicken, fajita seasoning, peppers and onion mixture and cheese.
- Mix well.
- Lay your tortillas out on a work surface.
- Spoon 2-3 tablespoons of the chicken mixture into a flour tortilla and roll it up.
- Place the Taquito Roll Roll seam-side down on the baking sheet.
- Repeat the filling and rolling process until you are out of tortillas.
- Once finished, spray the tops of the taquitos with non-stick cooking spray or brush with olive oil.
- Place pan in oven and bake for 15-20 minutes, or until edges and tops are golden.
- Then remove the pan from the oven and let the taquitos cool for a couple of minutes.
- Serve with your favorite toppings.
