Pineapple-Mint Juice

  1. Puree the pineapple in a blender until smooth.
  2. Pour the puree through a fine sieve into a bowl; discard the solids.
  3. Return half the juice to the blender; blend with half the ice and sugar.
  4. Add half the mint; pulse to combine.
  5. Transfer to a pitcher; repeat with the remaining ingredients.
  6. Just before serving, stir mixture and pour into ice-filled glasses.
  7. Garnish with mint sprigs, if desired.
