Lemon Lover's Coffee Cake

  1. Heat oven to 350.
  2. Grease bottom and sides of rectangular pan 13x9x2 inches with shortening.
  3. Beat sugar, butter, lemon peel, baking powder, vanilla and eggs in large bowl with electric mixer on low speed, scraping bowl constantlly (mixture will look curdled).
  4. Stir in flour.
  5. Spread in pan.
  6. Spoon lemon curd by rounded measuring teaspoonfuls about 3/4 inches apart onto batter.
  7. Bake 23 to 26 minutes or until golden brown.
  8. Cool 15 minutes.
  9. Drizzle Lemon Glaze over warm coffee cake.
  10. Serve warm or cool.
  11. Lemon Glaze:.
  12. Mix ingredients until smooth and thin enough to drizzle.
