Cheesy Chicken Casserole
- 4 chicken breasts
- 1 pt. fresh mushrooms, sauteed
- 2 bunches fresh broccoli, steamed
- 1 can cream of chicken soup
- 1 c. mayonnaise
- 1/2 c. evaporated milk
- 1 c. grated Cheddar cheese
- 1 (6 oz.) pkg. long grain and wild rice
- 4 Tbsp. butter
- 1/2 c. seasoned bread crumbs
- Simmer chicken until tender; pull from bones and discard skin and bones.
- Cook the rice and set aside.
- Stir together soup, mayonnaise, milk and cheese.
- Butter a 9 x 13-inch casserole dish. Cover bottom of dish with cooked rice.
- Top with chicken and add 1/2 of soup mixture.
- Add broccoli and mushrooms and cover with rest of the soup mixture.
- Melt butter and mix with bread crumbs. Cover casserole with the bread crumbs.
- Bake at 350u0b0 for 30 or 40 minutes.
