Easy Chicken Stir-Fry
- 1/2 medium red pepper, cut into strips
- 6 medium size fresh mushrooms, sliced
- 1/2 cup fresh broccoli florets
- 2 tsp. canola oil
- 2 oz.
- 1 Tbsp. stir-fry sauce
- 2/3 cup hot cooked instant brown rice
- 2 fresh apricots, cut into wedges
- 1/2 cup fat-free sorbet or sherbet
- 8 fl oz (1 cup) drinking water
- Cook and stir pepper, mushrooms and broccoli in oil in medium skillet on medium-high heat 5 min.
- or until crisp-tender.
- Add chicken breast strips and sauce; cover.
- Cook 2 min.
- or until heated through.
- Spoon over rice.
- Enjoy apricots topped with sorbet for dessert.
- Serve with a glass of water.
