Fruit Cake(Makes 5)
- 4 cups sugar
- 14 eggs
- 8 c. Swans Down Flour
- 1 lb. butter
- 2 cans crushed pineapple
- 2 lb. candied cherries
- 1 lb. white pineapple, candied
- 1/2 lb. green pineapple, candied
- 1 Tbsp. baking powder
- 2 tsp. salt
- 1 Tbsp. vanilla
- 1 Tbsp. lemon flavoring
- 1 box white raisins
- 2 boxes chopped dates
- 1 pkg. apricots, chopped
- 1 small pkg. figs
- all the pecans you want, chopped
- Combine all ingredients until well mixed.
- Grease and flour 3 tube pans.
- Fill pans approximately 2/3 full.
- Bake all 3 at once for 2 hours in 250u0b0 oven.
- Allow to cool.
- Remove from pans and cook the other 2.
- Leave batter for last 2 cakes in a bowl on the cabinet until 1st cakes are finished.
