Piccalilli
- 1 qt. chopped green tomatoes
- 2 sweet green peppers, chopped
- 2 sweet red peppers, chopped
- 2 large mild onions, chopped
- 2 Tbsp. mixed pickling spice
- 1 small cabbage, chopped
- 1/2 c. salt
- 2 c. apple cider vinegar
- 2 1/4 c. dark brown sugar, packed
- Remove label from 1 (12 ounce) jar sweet mixed pickles.
- Drain juice and thoroughly fill jar with sugar (about 1 1/2 cups), being sure all space between pickles is filled.
- Insert table knife in jar to make room for sugar.
- Let stand for a few minutes and add more sugar, if possible.
- Put a lid securely on jar.
- Invert jar and place in refrigerator.
- Turn jar occasionally so the sugar dissolves and pickles crystallize.
- After a week, refrigeration is not necessary.
