American Breakfast Cake Recipe
- 300 gm Plain flour
- 25 gm Caster sugar
- 3 tsp Baking pwdr
- 1 pch salt
- 110 gm Slightly salted butter
- 50 gm Mild Cheddar cheese, grated Lowfat milk to moisten
- 4 x Eating apples
- 50 gm Soft brown sugar, (50 to 80)
- 1/2 tsp Powdered cinnamon A little melted butter
- Sieve the flour, caster sugar, baking pwdr and salt together into a bowl.
- Rub in the butter, then mix the cheese in.
- Add in sufficient lowfat milk to moisten the mix and form a soft but not sticky dough.
- Knead the dough lightly on a floured board.
- Pat it out on to an ungreased Swiss roll tin about 18-25cm.
- Peel, core and thinly slice the apples and arrange on the dough.
- Sprinkle with the brown sugar and cinnamon, brush with the melted butter and bake for 25 min at 220C/425F/gas 7.
- Serve hot.
