Honey Mustard Curry Chicken

  1. Preheat oven to 375 degrees.
  2. Grease/spray a small baking dish (9x9 square or 9x13, depending on the size of your chicken breasts).
  3. Rinse chicken, pat dry, and arrange in your dish.
  4. In a small saucepan, melt the butter.
  5. Add the remaining sauce ingredients and mix well to combine.
  6. Bring sauce to a boil, stirring constantly.
  7. Once boiling and noticeably thickened, remove sauce from heat and pour it all over the chicken.
  8. Cover your dish with foil and put the pan into the oven; bake for 20 minutes.
  9. Remove foil; bake an additional 20 minutes.
  10. You may want to peek at your dish from time to time to make sure the sauce is still keeping your chicken nice and cozy.
  11. This is fantastic with white rice or potatoes.
  12. Make sure to spoon some of the delicious sauce on your chicken and accompaniment!
