Chicken And Peppers
- 4 chicken breasts, boned and cut into 1-inch squares
- 1 envelope Lipton onion soup mix
- 3 Tbsp. cooking oil
- 1 clove garlic, minced
- 2 sweet peppers (1 green and 1 red), cut into squares
- 3 celery, cut into 1/2-inch slices
- 3/4 c. cold water
- 3 Tbsp. soy sauce
- 3 tsp. cornstarch
- 1/2 tsp. sugar
- In bowl combine chicken with soup mix, 1 tablespoon oil, 1 tablespoon soy sauce, garlic and 1 tablespoon cornstarch. Marinate for 20 minutes.
- In skillet heat remaining oil and cook peppers and celery over high heat, stirring frequently for 3 minutes.
- Add green onions and cook 2 minutes.
- Remove from pan. Add chicken to skillet and cook 3 minutes.
- In separate bowl mix remaining soy sauce and cornstarch with water and sugar.
- Add to chicken in skillet with vegetable.
- Simmer for 3 minutes.
