Lemon Blueberry Pie

  1. In a saucepan, combine eggs, sugar, butter, lemon juice and peel; cook, stirring constantly, over medium-low heat until mixture thickens, about 20 minutes.
  2. Cool for 20 minutes, stirring occasionally.
  3. Pour into pie shell.
  4. In a saucepan, toss blueberries and sugar.
  5. Mix orange juice and cornstarch; add to blueberries.
  6. Cook over medium heat until mixture comes to a boil, about 8 minutes, stirring gently.
  7. Cook 2 minutes longer.
  8. Cool for 15 minutes, stirring occasionally.
  9. Spoon over lemon layer.
  10. Chill for 4-6 hours.
