Butterscotch Pie Um Um

  1. Combine brown sugar, flour and salt in a double boiler.
  2. Heat milk and slowly stir into flour and sugar.
  3. Cook over boiling water until mixture begins to thicken.
  4. Beat egg yolks in small bowl and stir about 1 cup hot milk mixture into egg yolks.
  5. Combine the two mixtures in top of double boiler; add butter and cook until thick. Pour into pie shell.
  6. Make meringue by beating egg whites and cream of tartar until stiff.
  7. Gradually add 4 tablespoons sugar to whites and continue beating until it holds a peak.
  8. Cover pie with meringue and bake at 400u0b0 until brown.
