Butterscotch Pie Um Um
- 1 c. dark brown sugar
- 2 Tbsp. all-purpose flour
- pinch of salt
- 1 c. milk
- 2 egg yolks
- 1 baked 8-inch pie shell
- 2 Tbsp. butter
- 4 egg whites
- 1/4 tsp. cream of tartar
- 4 Tbsp. sugar
- Combine brown sugar, flour and salt in a double boiler.
- Heat milk and slowly stir into flour and sugar.
- Cook over boiling water until mixture begins to thicken.
- Beat egg yolks in small bowl and stir about 1 cup hot milk mixture into egg yolks.
- Combine the two mixtures in top of double boiler; add butter and cook until thick. Pour into pie shell.
- Make meringue by beating egg whites and cream of tartar until stiff.
- Gradually add 4 tablespoons sugar to whites and continue beating until it holds a peak.
- Cover pie with meringue and bake at 400u0b0 until brown.
