Garden Supper Casserole
- 2 c. cubed soft bread
- 1/2 c. shredded sharp Cheddar cheese
- 2 Tbsp. melted margarine
- 1 c. cooked vegetables
- 2 Tbsp. chopped onion
- 3 Tbsp. margarine
- 3 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 c. milk
- 1 c. cut up meat
- 1 large tomato, sliced
- Heat oven to 350u0b0.
- Mix bread cubes, cheese and 2 tablespoons margarine.
- Spread 1/2 the mixture in greased 1-quart casserole; top with vegetables.
- Cook and stir onion in 3 tablespoons of butter until onion is tender.
- Blend in flour and seasoning.
- Cook over low heat, stirring, until mixture is bubbly.
- Remove from heat.
- Stir in milk.
- Heat to boiling, stirring constantly.
- Boil and stir for 1 minute.
- Stir in meat.
- Pour over vegetables. Arrange tomato slices on top; sprinkle with remaining bread mixture.
- Bake, uncovered, for 25 minutes.
