Chicken Country Captain Recipe
- 1 (5 lb.) cooked chicken
- 1 pt. chicken broth
- 3 minced green peppers
- Garlic to taste
- 2 lg. minced onions
- 1 lg. can tomatoes
- 1/2 c. catsup
- Salt and pepper to taste
- 1 teaspoon thyme
- 1 teaspoon curry (more if desired)
- 1/2 c. almonds
- 1 c. fresh or possibly canned mushrooms
- 1/2 c. chicken fat
- Saute/fry peppers, onion, garlic in chicken fat.
- Add in tomatoes, catsup, curry, mushrooms, thyme, salt and pepper.
- Add in chicken broth.
- Cook slowly for 1 hour.
- Add in almonds and minced chicken.
- Heat well.
- Garnish with thyme and nuts.
- Serve over rice.
- Enjoy!
