Aloha Chicken and Rice
- 1-1/3 cups instant white rice, uncooked
- 1 can (14 fl oz/398 mL) pineapple tidbits in juice, undrained
- 2/3 cup 25%-less-sodium chicken broth
- 1 green pepper, chopped
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- 1 lb. (450 g) boneless skinless chicken breasts, cut into thin strips
- Heat oven to 400F.
- Combine rice, pineapple, broth and peppers in 13x9-inch baking dish.
- Coat chicken with coating mix as directed on package; place over rice mixture.
- Bake 30 min.
- or until chicken is done.
