Baked Apricot Roll Recipe

  1. Combine flour, baking pwdr, sugar and suet in a large mixing bowl.
  2. Work suet into dry ingredients with fingertips.
  3. fold in sufficient water (6-8 tblsp) to make dough leave the sides of the bowl.
  4. Roll dough into an oblong about 30 X 45 cm.
  5. Spread with apricot jam and roll lengthwise into a large sausage shape.
  6. Seal edge with water and fold ends like an envelope.
  7. Place in a large buttered baking tin and bake in a warm oven 220C/425F for 20 to 30 min till golden brown.
  8. Serve hot with vanilla custard sauce and whipped cream.
