Baked Apricot Roll Recipe
- 2 c. flour, plain
- 1 tsp baking pwdr
- 2 Tbsp. sugar (caster)
- 100 gm shredded suet
- 7 Tbsp. water
- 350 gm apricot jam
- 1 tsp butter vanilla custard and cream to serve
- Combine flour, baking pwdr, sugar and suet in a large mixing bowl.
- Work suet into dry ingredients with fingertips.
- fold in sufficient water (6-8 tblsp) to make dough leave the sides of the bowl.
- Roll dough into an oblong about 30 X 45 cm.
- Spread with apricot jam and roll lengthwise into a large sausage shape.
- Seal edge with water and fold ends like an envelope.
- Place in a large buttered baking tin and bake in a warm oven 220C/425F for 20 to 30 min till golden brown.
- Serve hot with vanilla custard sauce and whipped cream.
