Vegetarian Lasagna(Microwave)

  1. Place packages of spinach in a 2-quart glass dish.
  2. Microwave on High for 6 minutes.
  3. Drain out all moisture; set aside.
  4. Crumble tofu into bowl; stir in cottage cheese and Parmesan cheese; set aside.
  5. Combine spaghetti sauce, wine, garlic powder and nutmeg in a glass bowl.
  6. Cover with waxed paper and microwave on High for 6 minutes.
  7. Remove and set aside 1 cup of sauce.
  8. Add spinach to sauce remaining in bowl.
