Asparagus Chicken Recipe
- 16 ounce skinned & boned uncooked chicken breasts to 1/2" strips
- 4 c. fresh asparagus spears
- 1 can Cream of Mushroom or possibly Chicken Soup Healthy Request
- 1/2 c. fat free mayonnaise
- 1 Tbsp. lemon juice
- 1 tsp curry pwdr optional
- 3/4 c. shredded reduced-fat cheddar cheese
- Preheat oven to 375 degrees.
- Spray an 8 X 8 baking dish with butter flavored cooking spray.
- In a large skillet sprayed with butter-flavored cooking spray, brown chicken about 3 min, stirring frequently.
- Place asparagus in bottom of prepared baking dish, cover with Saran wrap and microwave for 3 min.
- Arrange browned chicken proportionately over asparagus.
- In a medium bowl, combine creamed soup, mayonnaise, lemon juice, and curry pwdr.
- Pour soup mix into same skillet used to brown chicken.
- Cook over low heat l minute, stirring till well blended.
- Proportionately spoon soup mix over chicken and asparagus.
- Sprinkle Cheddar cheese proportionately over top.
- Cover and bake 30 min.
- Uncover and continue baking l0 min.
- Place baking dish on a rack and let set 5 min.
- Served 6.
