Something Special From Wisconsin Cheese Soup
- 2 tbsp butter
- 1 tbsp flour
- 1 tbsp chopped onion
- 1 quart milk
- 1/4 to 1/2 teaspoon salt
- 1/4 tsp pepper
- 1 tsp chopped pimiento
- 2 slice bacon, friend crisp and crumbled
- 1/4 lb Wisconsin American cheese, cut up
- Melt the butter in a medium kettle.
- Add the flour and onion, and saute' over medium heat until the onions begin to get soft.
- Do NOT brown them.
- Gradually add the milk, then the salt and pepper.
- Heat thoroughly over medium heat stirring constantly (don't let the milk curdle), until slightly thickened.
- Add the bacon, pimiento, and cheese.
- Stir until the cheese melts.
- Do not boil.
- Heat slowly.
- Pour into bowls and serve.
