What You've Got Bo Kho

  1. Combine onion,garlic, ginger, fish sauce and spices in a small bowl.
  2. In large mixing bowl, combine the beef with the spice marinade for at least 2 hours.
  3. Saute the beef in 2 T of olive oil until browned and seared under medium high heat.
  4. Transfer into the slow cooker and add the beef broth ~ add more broth or water to just cover and submerge the beef, if needed ~ set slow cooker to lowest possible setting and allow to cook covered for about 6 hours.
  5. About 1 hour before it's done, add the carrots and cook until they are cooked thru yet firm.
  6. Cooks Notes: you can serve this with french bread or rice noodles.
  7. These lil goodies are what we add to the Bo Kho.
  8. Jalapenos are a great add too.
