Oven Roasted Pork Loin and Veggies
- 1 whole Sweet Onion
- 2 whole Sweet Potatoes
- 5 whole Carrots
- 2 whole Bell Peppers, Core And Seeds Removed
- 1 whole Fennel Bulb
- 2 whole Golden Delicious Apples, Cored
- 2 pounds Pork Loin
- 1 teaspoon Salt And Pepper, Adjust To Taste
- 4 cloves Garlic, Minced
- 2 Tablespoons Dried Rosemary
- 2 Tablespoons Dried Thyme
- Extra Virgin Olive Oil, Enough To Drizzle In Your Pan And Over The Pork
- Preheat the oven to 450 degrees F
- Chop all of the vegetables into 1 chunks.
- Drizzle olive oil in the bottom of a roasting pan (use one with a lidyoull need it in a bit) and place the pork loin in the roaster.
- Cover the pork with a drizzle of olive oil, salt, pepper, garlic, and dried spices, and massage everything into the meat.
- Add the vegetables to the pan.
- Cover the roaster and put it in the oven.
- Roast for an hour, or until the pork is done.
- Remove the roaster from the oven, slice the pork, and serve.
