Belgian Beef Carbonnade
- 4 Tbsp. flour
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. paprika
- 3 lb. beef cubes
- 1/2 c. butter
- 6 large onions, sliced
- 1 garlic clove, halved
- 1 bay leaf
- 1/4 tsp. thyme
- 1/2 c. chopped celery leaves
- 1/4 c. parsley
- 3 Tbsp. brown sugar
- 2 1/2 c. beer
- 2 Tbsp. vinegar
- Mix flour, salt, pepper and paprika.
- Roll beef cubes in this until well coated.
- Melt butter in large saucepan.
- Add onions; saute until soft and tender.
- Remove.
- In same pan over high heat, sear beef cubes, a few at a time.
- Return onions and meat to pan. Set on low heat.
- Add garlic, bay leaf, thyme and celery. Sprinkle on parsley; add sugar and beer.
- Bring to simmer while stirring.
- Cover and poach on low heat, 1 1/2 hours.
- Add vinegar. Simmer 5 minutes.
- Makes 6 servings.
