Belgian Beef Carbonnade

  1. Mix flour, salt, pepper and paprika.
  2. Roll beef cubes in this until well coated.
  3. Melt butter in large saucepan.
  4. Add onions; saute until soft and tender.
  5. Remove.
  6. In same pan over high heat, sear beef cubes, a few at a time.
  7. Return onions and meat to pan. Set on low heat.
  8. Add garlic, bay leaf, thyme and celery. Sprinkle on parsley; add sugar and beer.
  9. Bring to simmer while stirring.
  10. Cover and poach on low heat, 1 1/2 hours.
  11. Add vinegar. Simmer 5 minutes.
  12. Makes 6 servings.
