Raisin Crumb Cake
- 2 1/4 c. cake flour, sifted and divided
- 1/2 c. sugar, divided
- 2 tsp. double-acting baking powder
- 1 c. skim milk
- 1/2 c. whipped butter, melted and divided
- 1 egg, lightly beaten
- 1 tsp. vanilla
- 3/4 c. plumped golden raisins, drained
- 1 tsp. cinnamon
- Preheat oven to 350u0b0.
- Spray a 13 x 9 x 2-inch baking dish with nonstick spray.
- Line pan with sheet of wax paper and spray again with nonstick spray; set aside.
- In a large bowl, combine 1 3/4 cups of flour, 1/4 cup of sugar and baking powder.
- In small mixing bowl, combine milk, 1/4 cup plus 1 tablespoon butter, egg and vanilla; stir.
- Pour into dry ingredients.
- Using electric mixer at medium speed, beat until blended.
- Stir in raisins.
- Pour into pan and spread evenly; set aside.
