White Beans with Sage and Olive Oil

  1. Place beans in large saucepan.
  2. Add enough cold water to cover by 3 inches and let soak overnight.
  3. Drain beans and return to pan.
  4. Add 6 cups cold water, 1/4 cup oil, chopped sage and garlic.
  5. Bring to boil.
  6. Reduce heat to medium-low.
  7. Cover partially; simmer until beans are just tender, stirring occasionally, about 45 minutes.
  8. Season with salt and pepper.
  9. (Can be made 1 day ahead.
  10. Cool.
  11. Cover and keep chilled.
  12. Rewarm before continuing.)
  13. Using slotted spoon, transfer beans to bowl.
  14. Top with more oil.
