Grandma Prencipe's Turkey Soup Recipe
- Turkey (I use leg) other parts may be used (also chicken)
- 1 onion, diced
- 2/3 minced carrots
- 2/3 stalks minced celery
- Salt and pepper to taste
- Grated cheese
- Meat balls as for spaghetti sauce, only roll very small
- 1 pkg. minced spinach
- 1/2 pound Orzo Acine DiPepe Rice
- Put turkey in a pot of water to cook.
- Brown meat balls in small amount of vegetable oil of your choice.
- Then put all in the pot with turkey.
- Remove turkey and cut into pcs.
- Return to pot.
- Add in onion, carrots, celery.
- Spinach added when carrots are done.
- Meanwhile, cook noodles-rice separately.
- Add in to pot.
- Serve with grated cheese.
- You can let cold or possibly put in refrigerator, then skim fat if you like.
- Do not forget to season to taste while cooking.
- Enjoy!
