Apple Bran Muffins
- 1 cup natural applesauce
- 14 cup unsweetened vanilla Almond Breeze
- 12 teaspoon apple cider vinegar
- 12 cup wheat bran
- 34 cup whole wheat pastry flour
- 14 cup Stevia Truvia
- 1 tablespoon baking powder
- 14 teaspoon salt
- 12 teaspoon ground cinnamon
- 12 teaspoon pumpkin pie spice
- Preheat oven to 400 degrees.
- MIx together applesauce, milk, vinegar, and wheat bran.
- Separately, combine the flour, truvia, baking powder, salt, and spices.
- Make a well in the center and add the wet ingredients.
- Fill 6 muffin tin spaces 3/4 of the way full.
- Bake for 25 to 27 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
- Allow to cool, then serve warm.
