Braised Red Cabbage With Cranberries Recipe
- Cooking spray
- 1 med Yellow onion, minced
- 2 x Cloves garlic, chopped
- 1 lb Red cabbage, sliced thin
- 1 c. Cranberries
- 1 Tbsp. Red wine vinegar
- 2 tsp Honey
- 1/2 c. Orange juice
- 1 med Bay leaf
- 1/4 tsp Ginger
- 1/8 tsp Grnd cloves
- In a heavy skillet, heat the cooking spray over moderate heat; add in the onion and garlic and cook, uncovered, till soft-about 5 min.
- Fold in the cabbage, cover and cook till the cabbage is barely wilted-about 10 min.
- Add in the cranberries, vinegar, honey, orange juice, bay leaf, ginger, and cloves; cover and continue cooking till almost all the liquid has evaporated and the cabbage has wilted-about 15 min.
- If the cabbage has wilted, but there is still considerable liquid left, remove the cover and raise the heat to high to boil down the liquid.
- Remove and throw away the bay leaf.
