Basic Stir Fried Beef Recipe

  2. Slice beef thin against the grain.
  3. Combine cornstarch, soy sauce, sherry and sugar.
  4. Add in to beef and toss to coat.
  5. Let stand 15 min, turning occasionally.

  7. Slice vegetables.
  8. Mince ginger root.
  9. 3.
  10. Heat oil.
  11. Add in beef and stir-fry till it loses its redness (about 2 min).
  12. Remove from pan.

  14. Heat remaining oil.
  15. Add in salt, then ginger root and stir-fry a few times.
  16. Add in vegetables and stir-fry to heat and coat with oil.
  17. 5.
  18. Stir in stock and heat quickly.
  19. Cook, covered, over medium heat, till vegetables are nearly done.
  20. 6.
  21. Return beef and stir-fry to reheat and blend flavors (about 1 minute more).
  22. Serve at once.

  26. VARIATIONS:
  27. In step 1, add in to the cornstarch mix 1 egg, beaten.
  28. Omit the cornstarch, sherry and sugar, and double the soy sauce instead.
  29. Toss beef in the soy, then dip in beaten egg.
  30. In step 3, before adding beef, add in 1 garlic clove, crushed; and 1 scallion stalk, in 1/2-inch sections, and stir-fry a few times.
