Sweet Potato Bread

  1. Preheat oven to 325u0b0.
  2. Grease only the bottom of a loaf pan. In a small bowl mix sweet potatoes, raisins and nuts and set aside. Mix dry ingredients together and blend.
  3. Add lightly beaten eggs, oil and milk and blend with wooden spoon.
  4. Lastly, add flavoring and sweet potato mixture and blend well by hand. Pour into loaf pan.
  5. Bake 1 hour and 10 minutes.
  6. Cool 15 minutes before removing from pan.
  7. Cool, wrap and store overnight for better slicing.
