Sweet Potato Bread
- 1 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 c. sugar
- 2 eggs
- 1/2 c. vegetable oil
- 2 Tbsp. milk
- 1 tsp. butternut flavoring
- 1 c. mashed sweet potatoes
- 1 c. chopped pecans
- 1/2 c. raisins
- Preheat oven to 325u0b0.
- Grease only the bottom of a loaf pan. In a small bowl mix sweet potatoes, raisins and nuts and set aside. Mix dry ingredients together and blend.
- Add lightly beaten eggs, oil and milk and blend with wooden spoon.
- Lastly, add flavoring and sweet potato mixture and blend well by hand. Pour into loaf pan.
- Bake 1 hour and 10 minutes.
- Cool 15 minutes before removing from pan.
- Cool, wrap and store overnight for better slicing.
