Apple Nut Salad And Tofu Honey Dressing Recipe
- 5 x Red Delicious apples, sliced
- 1/4 c. Fresh lemon juice
- 3 stalk celery, diced
- 1 can (8-oz) pineapple tidbits in unsweetened pineapple juice, liquid removed
- 1 c. Plain nonfat yogurt
- 1/2 c. Low fat silken tofu
- 1 Tbsp. Honey
- 1 tsp Grnd cinnamon
- Place sliced apples in mix of lemon juice and water.
- Add in more water if needed to cover apples.
- At serving time, drain liquid from apples.
- Combine apples, celery, and pineapple.
- For the dressing: Combine yogurt, tofu, honey and cinnamon in a food processor and blend till smooth.
- RefrigerateCombine apple mix with dressing and toss gently.
- Garnish with mint sprigs.
- Serves 8.
