Hot Homemade German Potato Salad(Ala Barbara Sandquist)
- 8 bacon strips
- 3/4 c. chopped onion
- 2 Tbsp. all-purpose flour
- 2/3 c. plus 2 Tbsp. dark cider vinegar
- 1 1/3 c. water
- 1/4 c. sugar
- 1 tsp. salt
- 1/8 tsp. ground pepper
- 6 c. peeled, cooked, cooled, sliced potatoes (1/8 to 1/4-inch thick)
- Use a large skillet.
- Fry bacon until crisp (not burned); remove and set aside.
- Drain all but 3 tablespoons of drippings; cook onions in drippings until clear and tender.
- Stir in flour; blend well (still under low to medium heat).
- Add vinegar and water; cook and stir until slightly bubbly and thick.
- Add sugar and stir until it dissolves.
- Crumble bacon into tiny and small pieces; gently stir crumbled bacon and sliced potatoes into heated mixture in skillet.
- Heat thoroughly, stirring to evenly coat potato slices.
- Serve hot or warm.
- Yields 6 to 8 servings. "Totally Trumpy!"
