Thai Barbecue
- 1 ounce Thai seasoning (1/2 packet)
- 1 (14 ounce) can coconut milk
- 2 12 lbs chicken breasts or 2 12 lbs chicken thighs or 2 12 lbs chicken drumsticks or 2 12 lbs chicken wings
- In a medium size bowl, make a marinade by dissolving Spicy Chicken and Rice Seasoning Mix in Coconut Milk.
- To bake: Place chicken in 9 x 13 baking dish.
- Pour all of marinade over chicken.
- Bake in 375F oven for 50 to 60 minutes, basting several times.
- TO BROIL OR GRILL: Dip chicken in marinade.
- Broil or grill, using medium heat.
- Turn often while cooking, brushing with extra marinade.
