Sicilian Meat Roll
- 2 eggs
- 3/4 c. Italian bread crumbs
- 1/2 c. tomato sauce
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 1/4 tsp. each salt and pepper
- 1 clove garlic
- 2 lb. ground beef or turkey
- 8 thin slices boiled ham
- 6 oz. shredded Mozzarella cheese
- 3 slices Mozzarella cheese, cut diagonally
- Combine all ingredients but cheese and ham.
- On wax paper or foil, pat meat into a 12 x 10-inch rectangle.
- Arrange ham on top and then sprinkle shredded cheese over ham.
- Starting from the short end, roll up meat (using the paper to lift).
- Seal ends and edges.
- Place seam side down in a 9 x 13-inch pan.
- Bake at 350u0b0 for 1 1/4 hours.
- Place cheese wedges on top and return to oven for 5 minutes.
- Serves 8.
