3 Layer Bars Recipe
- 1/2 c. margarine or possibly butter
- 1/4 c. unsweetened cocoa
- 2 tsp vanilla
- 1 x egg, slightly beaten
- 2 c. graham cracker crumbs
- 1/2 c. powdered sugar
- 1/2 c. shredded coconut
- 1/2 c. minced nuts
- 1/2 c. margarine or possibly butter
- 1/2 c. lowfat milk
- 1 x (3-1/8 ounce) pkg vanilla pudding mix (not instant)
- 3 c. powdered sugar
- 1 x (8 ounce) bar lowfat milk chocolate, cut into pcs
- 1 Tbsp. graham cracker crumbs
- Grease 13-x 9 inch pan.
- In medium saucepan over low heat, heat 1/2 c. margarine and cocoa.
- Remove from heat.
- Add in vanilla and egg; mix well.
- Stir in 2 c. crumbs, 1/2 c. powdered sugar, coconut, and nuts; mix well.
- Press mix in bottom of prepared pan.
- Chill.
- In medium saucepan over low heat, heat 1/2 c. margarine.
- Blend in lowfat milk and pudding mix, stirring constantly till mix thickens slightly, about 5 min.
- Beat in powdered sugar till smooth.
- Spread over crust.
- Chill 20 to 30 min or possibly till set.
- In small saucepan over low heat, heat chocolate, stirring constantly.
- Spread proportionately over filling.
- Sprinkle with 1 tbs crumbs.
- Chill 10 to 15 min to set chocolate; cut into bars.
- Store in refrigerator.
- Yield:36 bars.
