Roma Bella Tortellini Boscaiola
- 1 Tbsp. olive oil
- 1/2 c. frozen peas
- 1/2 c. white wine
- 1/2 lb. fresh tortellini
- 1 fresh Italian sausage
- 1 c. mushrooms, sliced
- 1 1/2 c. whipping cream
- In large frying pan over medium heat, heat olive oil.
- Remove the sausage meat from the casing and cook it in the pan, breaking it up into small pieces with the back of a spoon.
- Add peas, mushrooms and wine and simmer for 5 minutes.
- Add cream to the pan; bring to a very gentle boil and let simmer for about 10 minutes, stirring frequently, until the sauce reduces and thickens slightly.
- In a large pot of salted boiling water, cook the tortellini for 12 to 15 minutes.
- Drain and add the tortellini to the sauce and stir for a minute to mix thoroughly and heat through.
- Serves 2.
