Cabbage Soup

  1. Heat olive oil in large pot over medium heat.
  2. Shred cabbage and add to pot.
  3. Slice carrots on the bias and add to oil and cabbage.
  4. Saute vegetables until cabbage softens.
  5. (About 10 minutes)
  6. Add all of the vegetable broth.
  7. Add spices to pot.
  8. Salt to taste.
  9. (This depends on the saltiness of your broth. )
  10. Simmer on low heat until cabbage and carrots are tender enough for your taste.
  11. Enjoy!
