Sausage In The Pot
- 1 1/2 lb. kielbasa or Polish sausage
- 1 Tbsp. vegetable oil
- 6 small potatoes, pared
- 6 large carrots, pared and cut into chunks
- 3 white turnips, pared and cubed
- 6 stalks celery, cubed
- 4 to 6 small to medium onions, whole or cut in half
- 1 tsp. salt
- 2 c. water
- parsley sprigs
- 6 to 10 peppercorns
- 1 bay leaf
- Cut X's in sausage at 1-inch intervals.
- Brown sausage, scored side down, in oil in kettle, turning often.
- Add to kettle the potatoes, carrots, turnips, celery and onions.
- Add water.
- Add parsley sprigs, peppercorns and bay leaf.
- Bring to boil; reduce heat and cover.
- Simmer for 45 minutes to 1 hour, or until vegetables are tender.
- Remove sausage to center of serving platter; arrange vegetables around sausage.
- Serve with a loaf of crusty bread.
- Serves 6.
