Unfried Onion Rings
- 8 large Vidalia onions
- 4 cups crushed butter crackers
- 2 tsp. paprika
- 1 tsp. pepper
- 1 cup flour
- 8 each egg whites, beaten until frothy
- 2-1/2 cups KRAFT Light Ranch Dressing
- Cut onions crosswise into 3/4-inch-thick slices; separate slices into rings.
- Set aside 64 of the largest rings (or 16 of the rings for trial recipe); reserve remaining onion rings for another use.
- Place crushed crackers in food processor container fitted with steel blade; cover.
- Process until crackers are finely crushed.
- Combine cracker crumbs, paprika and pepper in large bowl (or in small bowl for trial recipe).
- Divide crumb mixture evenly into 2 bowls; set aside.
- Coat onion rings with flour.
- Dip in egg whites, then in 1 bowl of the cracker crumb mixture, turning onions over to evenly coat both sides and switching to the second bowl of cracker crumb mixture after 1/2 of the onions have been coated.
- Place onion in single layer on baking sheets sprayed with cooking spray.
- Bake in 400F-standard oven 20 min.
- or until golden brown and crispy, turning over after 10 min.
- Serve hot with the dressing for dipping.
