Fat-Free Carrot Cake
- 1 1/2 c. Promise ultra fat-free margarine
- 1 c. brown sugar
- 1 c. white sugar
- 4 Egg Beaters (1 c.)
- 3 c. flour
- 1 1/2 tsp. baking soda
- 3 tsp. baking powder
- 1 tsp. lite salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1 (8 oz.) can crushed pineapple (undrained)
- 2 tsp. vanilla
- 3 c. grated carrots
- 1 c. raisins
- 1 c. Grape-Nuts cereal
- Cream together first 4 ingredients.
- Add pineapple and vanilla. Add flour, soda, baking powder, salt and spices, which have already been mixed together.
- Fold in carrots, raisins and Grape-Nuts. Pour into Bundt pan, sprayed with Pam cooking spray.
- Bake at 350u0b0 for 45 to 60 minutes.
- Cool approximately 10 minutes; remove from pan.
- Frost with non-fat cream cheese frosting.
