Cheesy Sweet Potato-Mushroom Frittata

  1. Heat oven to 350 degrees F.
  2. Whisk eggs and milk in medium bowl until blended.
  3. Stir in cheese.
  4. Heat oil in large ovenproof skillet on medium heat.
  5. Add vegetables; cook and stir 5 to 7 min.
  6. or until potatoes are tender.
  7. Add egg mixture.
  8. (Do not stir.)
  9. Cook on low heat 2 to 3 min.
  10. or until edge of frittata begins to set.
  11. Place in oven.
  12. Bake 15 min.
  13. or until center is set.
  14. Run knife around edge of pan to loosen frittata.
  15. Let stand 10 min.
  16. Carefully slide frittata onto plate.
  17. Cut into wedges to serve.
