No Bake Sugar-Free Pumpkin Pie
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 1 envelope Knox unflavored gelatine
- 1 Keebler Ready-Crust graham cracker pie crust
- 1 can evaporated milk
- 2 Tbsp. water
- 1 egg, slightly beaten
- 1 can (16 oz.) pumpkin
- 16 pkg. Equal brand sweetener
- In small bowl, blend Equal with evaporated milk.
- Add egg, cinnamon, ginger, nutmeg and salt.
- Blend and set aside.
- In medium saucepan, sprinkle unflavored gelatine over water; let stand 1 minute.
- Stir over low heat until gelatine is completely dissolved, about 2 minutes.
- Blend in milk mixture.
- Continue stirring over low heat until mixture is slightly thickened; about 5 minutes. Blend in pumpkin.
- Turn into crust.
- Chill until firm.
- Garnish if desired with whipped cream.
- Makes 8 servings.
